Creamy, Dreamy Dark Chocolate Coconut Chia Seed Breakfast

And the chias are back!!

I feel like I haven’t done a chia seed breakfast in quite some time

As you may know, I have been craving dark chocolate and coconut lately, so I decided to base this recipe off these flavors.

The recipe itself is really quite easy to make.

All you’re going to need is

1. 3/4 cup plain greek yogurt

2. a little bit (less than 1/4 cup) almond milk

3. 1 tbsp chia seeds

4. 1 tbsp ground flax seeds

5. cinnamon, and any stevia or sweetener to taste

6. coconut extract

7. 1 tbsp cocoa or carob powder

8. 1/4 cup homemade coconut granola 

9. 1/4 cup puffed wheat cereal (optional)

Start off by combining the greek yogurt and almond milk.  You want this to be slightly thinner than the regular consistency of greek yogurt, but not as thin as milk.  It should still be thick.

Add in the rest of the ingredients (except the granola and puffed wheat)

Let thicken overnight or at least for a few hours, and then add in the granola and puffed wheat

I love the textures that are in this.  Plus the coconut and dark chocolate flavors stand out beautifully.

And it’s extremely satisfying… exactly what you need in a breakfast :)

Question: What do you prefer almond joys or mounds bars?

I might actually prefer mounds bars just because I feel like there’s more coconut in them sans the almond.
